Ingredients
- 8 medium red new potatoes
- ½ cup Della Terra Garlic Olive Oil (or your favourite Premium Extra Virgin Olive Oil or Tuscan Herb Olive Oil))
- 2 tsp kosher salt
- Fresh ground pepper, to taste
- 1 cup grated cheddar or other melting cheese (optional)
- 1 tbsp fresh chopped chives, for garnish
- Sour cream, for serving (optional)
Instructions
- Preheat oven to 400°F.
- Place each potato in a large spoon and make thin slices along the length, using the spoon as a guide so you do not cut all the way through.
- In a large bowl, add Garlic Olive Oil and toss potatoes thoroughly, ensuring oil gets between the slices.
- Arrange potatoes on a foil-lined baking sheet, cut side up.
- Season generously with salt and pepper, making sure to get seasoning between the slices.
- Bake for 30 minutes, until edges begin to turn golden.
- If using cheese, remove potatoes, sprinkle cheese over top, and return to oven for 15–20 minutes, until tender and golden.
- Finish with fresh chives and serve warm with sour cream if desired.
