There’s something about a summer afternoon that slows everything down in the best possible way. The sun hangs a little longer in the sky, the grass smells greener, and suddenly, the idea of putting together a “fancy dinner” just means stepping outside, lighting the grill, and tossing on whatever you’ve got.

This steak? It’s the heart of those kinds of days.

It’s not fussy. It just needs a good soak in rich, dark espresso balsamic while you relax into the rhythm of the day. When it hits the grill, the balsamic bubbles and caramelizes into a deep crust, whispering of espresso but not overpowering—just enough to make your guests pause mid-bite with that look. You know the one.

And then the finish: a crumble of blue cheese and a pinch of fleur de sel. It's the kind of touch that feels special without trying too hard. Just like everything else on the table—corn still in the husk, charred sweet and smoky, a big bowl of grilled veggies you didn’t measure or overthink, maybe a half-sliced watermelon, maybe not.

The best part? You don’t have to dress up, you don’t even have to clean up much. Just kick off your shoes, let the breeze tangle your hair, and maybe crack open something cold. The kids are running barefoot, the chairs don’t match, and someone’s dog is probably sneaking a bite off someone’s plate. It’s messy, it’s easy, it’s perfect.

This is steak for the days that feel like they’ll never end—and honestly, you wouldn’t want them to.

Ingredients:

These ingredients are more of a guide. Don't overthink it, add more or less, use a measuring cup or don't! 

    Method:

    1. Marinate: Place the steaks in a large baking dish and drizzle with the Espresso Balsamic. Let sit for 1 hour, flip and let sit for another hour (or overnight in the fridge if you have the time). Saving the balsamic for use again on the grill. 
       
    2. Preheat the grill: Heat to 500°F.
          
    3. Grill: Use about half of the balsamic from marinating to drizzle on the steaks while on the grill. For medium-rare steak, grill for 3 minutes each side (5 minutes for well done), drizzling with the remaining balsamic again after flipping. 

    4. Finish & serve: If you're feeling fancy, finish with a pinch of fleur de sel, crushed black pepper and a sprinkle of blue cheese while still on the grill. Serve with grilled vegetables or corn (we love drizzling pesto on ours) or don't, the choice is yours!
