Ingredients
- 454 g ground beef, chicken, or turkey
- 1 tbsp Della Terra Chipotle Olive Oil
- 1 small onion, diced
- 4 garlic cloves, minced
- 1 jalapeño, finely chopped
- 1/2 cup salsa or diced tomatoes
- 1 tsp cumin powder
- 1 tsp chili powder
- 2 tbsp tomato paste
- 4 cups cauliflower pearls
- 1 bell pepper, diced
- Salt, to taste
- Mexican toppings: fresh cilantro, avocado, jalapeños, lime slices, grated cheese, sour cream
Directions
- Heat Chipotle Olive Oil in a large non-stick skillet over medium heat.
- Add ground meat and cook until browned.
- Add onion, garlic, and jalapeño. Sauté until onion is translucent and garlic is fragrant.
- Stir in salsa or diced tomatoes, tomato paste, cumin, chili powder, and salt.
- Add bell pepper and cauliflower pearls. Mix well to combine.
- Cover and cook for 5–7 minutes, stirring occasionally, until cauliflower is tender.
- Taste and adjust seasoning as needed.
- Serve hot with your favourite Mexican toppings.
