Preheat oven to 325°F.

Heat 2 tbsp Butter Olive Oil in a large pot. Add popcorn kernels and pop for 3–5 minutes, until fully popped. Transfer to a large bowl.

Place remaining 1 tbsp Butter Olive Oil in a saucepan. Add sugar, honey, and Dark Chocolate Balsamic. Stir until sugar begins to dissolve. Bring to a steady simmer and cook for 3–5 minutes without stirring.

Carefully add baking soda and stir quickly until mixture foams and lightens.

Pour caramel over popcorn and stir to coat evenly.

Spread mixture onto a parchment-lined baking sheet.

Bake for 20 minutes, stirring once halfway through if desired.

Serve warm.
