This oil is very balanced and well-rounded. A healthy bitterness with notes of green tea, wild fennel, and fresh lettuce greens round out the complexity of the flavour profile. The finish is a classic warming black peppercorn that lingers beautifully. It tastes amazingly fresh.

This is the epitome of a perfect, herbaceous Hojiblanca olive oil. Its aroma is a fantastic blend of flowers and herbs, unripe peach, green almond, nectarine, fresh-cut grass, and aromatic tarragon. Combined with tasting notes of green banana, apple, and star anise in flavour.

Harmonious and cohesive between aroma and flavour, this oil is perfect for use in and for finishing fresh spring risotto or pasta with green peas, fennel, and dill. Due to the fruity aroma, this Hojiblanca is also delightful in citrus olive oil cakes, dark chocolate mousse, chocolate ganache, truffles, or chocolate bark. Bold enough to be used in marinades and sauces, this is best served with pork or chicken and used in fruity and herb-based sauces; sauté pineapple or apple and serve over ham, or sauté cherries or plums and serve over chicken.
