Cucumber Melon White Balsamic
Creamy avocado, bright lemon, and savoury sun-dried tomatoes come together on crisp toasted bread finished with Garlic Olive Oil and a fragrant basil lemon salt.

Makes: 4–8 servings
Ingredients
- 1 cup sun-dried tomatoes
- 1 lemon, zest and juice
- 6 basil leaves, very finely chopped
- 4 slices whole grain bread
- 2 ripe avocados
- 2 tbsp Della Terra Premium Extra VIrgin Olive Oil
- Della Terra Garlic Olive Oil, for brushing
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Directions
In a small bowl, rub together lemon zest, basil, and 1 tbsp kosher salt until the basil is fully incorporated.
Brush bread slices with Garlic Olive Oil and season with basil salt and black pepper.
Grill or toast until golden and crisp.
Slice avocados in half and remove pits.
Scoop 3 avocado halves into a bowl with Premium Extra Virgin Olive Oil and mash with a fork.
Season with salt, pepper, and lemon juice.
Thinly slice the remaining avocado half.
Spread mashed avocado over toasted bread.
Top with sliced avocado and sun-dried tomatoes.
Serve immediately.
