Using the quinoa and ratios below as a base, this salad can be adapted to any combination of ingredients with your favourite Della Terra Olive Oil and Balsamic flavours. Our version is inspired by a traditional Greek salad.
- 2 cups quinoa
- 3 green onions, sliced
- 1/2 pint grape or cherry tomatoes, quartered
- 1/2 English cucumber, diced
- 1/2 cup sliced black olives
- 3/4 cup crumbled feta
- 1/2 cup chickpeas, rinsed and drained
- 1/2 cup Della Terra Lemon Olive Oil
- 1/2 cup Della Terra Sicilian Lemon White Balsamic
- Freshly ground pepper
Cook quinoa according to package directions using stock or water. Fluff quinoa and add Della Terra Lemon Olive Oil while still warm. Allow to cool and add in remaining ingredients. Flavours are best if made a couple of hours in advance.
