In a medium bowl combine the shrimp, lemon zest, garlic and cinnamon. Cover and refrigerate for up to 3 hours or until ready to cook.
Heat the oil in a large skillet on high. Add the shrimp mixture and toss rapidly for 2 to 3 minutes, just until shrimp starts to curl. Season with salt and pepper. Add the lemon juice and fresh cilantro, and serve immediately on a small platter for sharing.
