Juicy sea scallops marinated in Lemon Olive Oil, coriander, and lemon-pepper seasoning, wrapped in partially cooked bacon and grilled until golden and lightly crisp on the outside.

Ingredients
- 20 medium fresh sea scallops
- 2 tbsp lemon-pepper seasoning
- 1 tbsp fresh coriander, chopped
- 1/4 cup Della Terra Lemon Olive Oil
- Bacon strips (for wrapping)
Directions
In a bowl, toss scallops with lemon-pepper seasoning, chopped coriander, and Della Terra Lemon Olive Oil.
Allow to marinate for at least 20 minutes, but no longer than 1 hour.
In a large skillet over medium heat, cook bacon for about 1 minute per side, until partially cooked but still pliable.
Transfer bacon to paper towels to drain and cool slightly.
Once cool enough to handle, lay bacon strips on a work surface.
Place one scallop near the bottom of each strip, keeping the round side down.
Roll bacon around each scallop, wrapping tightly and securing with a toothpick if needed.
Thread 2–3 wrapped scallops onto skewers.
Grill over medium heat for 3–5 minutes per side, until bacon is crisp and scallops are just cooked through.
Remove from skewers and serve immediately.
