Dressing:
- 1/3 cup local honey
- 1 teaspoon salt
- 1/3 cup Della Terra Condimento Bianco
- 2 teaspoons minced onion
- 1 cup Della Terra Blood Orange Olive Oil
- 1 1/2 tablespoons poppy seeds
Yields 1 ½ cups of dressing.
Salad:
- 1 white grapefruit
- 2 oranges
- 2 avocados
- 1/4 cup lemon juice
- ½ cup whole raw almonds
- 2 heads Romain Lettuce
Mix all dressing ingredients in a medium bowl and whisk thoroughly. Set aside for several hours or, for best results, make the day before and chill overnight to allow flavours to combine.
Peel oranges and grapefruit, and cut into slices. Cut avocados in half, remove pits, and peel. Cut into slices and coat with lemon juice to prevent browning. Chop romaine lettuce and toss in a large bowl with part of the poppy seed dressing. Layer with grapefruit, oranges, avocado, and almonds. Drizzle with more poppy seed dressing and serve.
