Roasted Cherry Tomato Spaghetti
A simple, flavourful pasta dish made with roasted cherry tomatoes, fresh basil, creamy goat cheese, and briny black olives. Finished with Della Terra Basil Olive Oil and Tradizionale Dark Balsamic for a fresh and elegant weeknight meal.

Ingredients
- 12 oz spaghetti
- 1/4 cup thinly sliced fresh basil
- 1/4 cup crumbled goat cheese
- 1/4 cup sliced black olives
Sauce:
- 4 cups cherry tomatoes, halved
- 4 cloves garlic, sliced
- 3 tbsp Della Terra Basil Olive Oil
- 1 tbsp Della Terra Tradizionale Dark Balsamic
- 2 tsp minced fresh rosemary
- 1/2 tsp salt
- Pinch of hot pepper flakes
Directions
In a 13 x 9-inch glass baking dish, toss together the cherry tomatoes, garlic, Basil Olive Oil, Tradizionale Dark Balsamic, rosemary, salt, and hot pepper flakes.
Roast in a 400°F oven until the tomatoes are shrivelled, about 25 minutes.
Meanwhile, in a large pot of boiling salted water, cook the spaghetti until al dente, about 8 minutes. Drain and transfer to a large serving bowl.
Toss the pasta with the roasted cherry tomato sauce and fresh basil until well coated.
Sprinkle with goat cheese and sliced black olives before serving.
