Favuzzi - Tuscan Pasta Sauce

Made with slow-cooked, melt-in-your-mouth tomatoes, this Tuscan-style sauce also features a hint of caramelized red pepper and a touch of garlic. It could be described as the most "classic" Italian sauce, since all its aromatic notes play up the taste of fresh tomatoes in perfect harmony.

This classic tomato sauce is a must-have for all your pasta dishes. It can also be used as an ingredient in pappa al pomodoro, a traditional Tuscan soup made with stale bread, which is just as good served hot, cold or at room temperature. Authentically Italian pasta dishes are not served swimming in sauce. Average proportions are 375 mL (1 ½ cup) tomato sauce for 500 g (1 lb) pasta. Don't throw away all your pasta cooking water: it's a good idea to add a bit to your sauce. Mix in ¼ to ½ cup (or a ladleful) cooking water with the sauce before adding the pasta. The salted, starchy water will enhance flavours and thicken the sauce, helping it stick to the pasta.
