Olive oil gives paletas a creamy, smooth texture. A healthy and refreshing hot weather treat!
- 2 cups fresh wild blueberries, washed
- 1 tsp grated lime zest
- 2 tbsps. Della Terra Lemon Olive Oil
- 1 cup plain yogurt (4-5% M.F.)
- 1/2 cup honey
Place the blueberries in a medium sauce pan over medium heat with 2 tablespoons of water, lemon zest, and honey. Heat until blueberries are simmering, approximately 2 minutes. Allow mixture to cool slightly. Add yogurt and olive oil, whisking until blended. When mixture is at room temperature, portion into 12 popsicle (or paleta) molds and freeze.
