Creamy “Ricotta” Spread

A drizzle of olive oil and balsamic delivers a fresh variation on a creamy spread that goes well with anything. Stuff it in tomatoes, spread it on crostini, use it as a dip… the possibilities are endless. For easy prep, make it in advance, then drizzle the olive oil and balsamic tableside.

  • 2 pkgs (350g each) extra-firm tofu
  • 6 tbsps large-flaked nutritional yeast
  • 5 tbsps freshly squeezed lemon juice
  • 3 tbsps roasted tahini paste
  • 1 tbsp Della Terra Garlic Olive Oil
  • Two small handfuls fresh basil leaves
  • Fine sea or Himalayan salt to taste
  • Fresh ground black pepper to taste

Put the tofu, nutritional yeast flakes, lemon juice, tahini, oil, basil, and a generous pinch of salt in the food processor. Process until well combined and nearly smooth, scraping down the sides if necessary. Adjust salt to taste. Add freshly ground pepper to taste. Process to combine.

Serve as desired, drizzling with the ingredients in one of the Twists right before enjoying.
